Best Chicken Breast Recipe

Roasted Chicken Breast

 

I love roasted chicken, but sometimes it can be a little boring. This recipe may be the Best chicken Breast Recipe because this recipe is going to spice up your taste buds and make you come back over and over. Some sweet and sour sauce and a little Worcestershire sauce makes it very mouth watering. And a very fun way of fixing chicken is to put it on a skewer. Makes serving very quick and interesting too.

And the roasting technique is cool too. Not overly complicated. Just a bit of water in the roasting pan which gives a quick steam and makes the meat very tender.  You could put some veggies on the skewers with the meat if that is your desire which would make a more complete meal. Serving on a bed of rice would be beautiful. Enjoy!

Ingredients
  1. 4 chicken breasts, boneless and skinless
  2. 1/2 cup sweet and sour sauce (I use La Choy)
  3. 2 Tablespoons Worcestershire sauce
  4. 8 Skewer sticks (optional)
  5. 1/4 cup water.
  6. Sweet and Sour Dipping Sauce (optional)
Instructions
  1. Cut your chicken into three pieces per breast. Put the chicken breasts on the skewers. Mix sweet and sour sauce with the Worcestershire sauce. Coat the chicken breast with the mixture. Put in a roasting dish coated with non-stick spray. Put the 1/4 cup water in the bottom of the pan. Put in 425 oven uncovered for 10 minutes.
  2. Turn over, reduce oven temperature to 350 and cover the dish tightly with foil then return to bake for 35 minutes longer.
  3. Remove from oven (test with a meat thermometer*see note) and serve with sweet and sour dipping sauce (if desired).
Notes
  1. The water in the bottom of the pan in a hot oven for ten minutes gives the meat a quick steam and makes it extra tender.

Fried Chicken Is a Southern Staple – So Delicious

Fried Chicken is simply a staple in a southern home and a southern cook living in the North is pretty happy to supply this delicious recipe for their family too. But this Fried Chicken recipe has a different spin on it. Making your chicken with a brine.

This was a new concept to me until I learned about a Brine Turkey. And figured it should be doable for a chicken for sure. The extra flavor that you get with using a brine is amazing and it is a fantastic coating and cooking process.

I think you are going to love it and if you enjoy cooking anyway, using a Brine for your home made fried chicken is just something you have to try.  Here’s the recipe

Fried Chicken with Homemade Brine

Fried Chicken with Homemade Brine

Ingredients

For the Brine:
2 tablespoons olive oil
1 cup chopped yellow onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
12 cloves garlic
4 quarts water
1/2 cup sugar
2/3 cup kosher salt
1 cup white wine
1/2 cup honey
4 tablespoons black peppercorns
2 quarts ice
2 whole fryers, cut into 8 pieces each
For the Seasoning and Frying:
6 cups all-purpose flour
4 tablespoons dried marjoram
2 tablespoons dried tarragon
2 tablespoons freshly cracked black pepper
2 tablespoons granulated garlic
2 tablespoons granulated onion
6 cups buttermilk
1 quart peanut or canola oil
Salt
Special Equipment: Large cast iron skillet or heavy skillet, for frying

Instructions

  1. To make the brine:
  2. In a large stockpot, over medium-high heat, heat oil and sweat the onions, peppers and garlic until just softened, 4 to 5 minutes. Add water, sugar, salt, wine, honey and peppercorns and bring to a boil.
  3. Remove from heat, let cool 15 minutes then add ice to cool completely.
  4. Frying chicken:
  5. Submerge chicken pieces into brine and refrigerate for 4 to 12 hours.
  6. Remove chicken from brine, rinse and pat dry. In a small bowl, combine the flour and spices. Divide mixture between 2 shallow bowls.
  7. Pour buttermilk in a separate bowl. Dredge chicken pieces in flour, then buttermilk, then dredge in second bowl of flour. Set pieces on a baking sheet fitted with a wire rack and let chicken rest 15 minutes.
  8. Meanwhile, heat oil in a skillet to 350 degrees F. Add the chicken carefully, cooking in batches, if necessary. Do not overcrowd pan.
  9. Cook chicken until golden brown and cooked through, about 20 minutes, turning pieces as they brown. Remove to a paper towel-lined plate and immediately season with salt and serve.

Chicken and Dumplings True Comfort Food – Now in the Crock Pot!

Chicken and dumplings is a Southern comfort food at its Southern comfort best. But Crock Pot Chicken is just an intelligent way to go. I’m busy. How about you?I really like Crock pots and I think they are underutilized.So let’s change that, shall we?

I’ve had this wonderful chicken recipe dozens of different ways. Sometimes I make my own dumplings from scratch. Of course, I am usually trying to impress someone when I go to that extra effort.  But no matter it is delicious. And unnecessary. There are so many delightful ways to make dumplings, you should experiment with different techniques, One of the nicest and easiest ways is to make biscuits and drop it into the boiling chicken liquid.

Here is a variation on a great crock pot recipe. This is the quick , down and dirty method where you don’t even have to make the dumplings from scratch and you’ll never know the difference. Just don’t tell them.  Chicken and Dumplings can be on your dinner table tonight. Bon Appetit!

Crock Pot Chicken -Chicken and Dumplings

Crock Pot Chicken -Chicken and Dumplings

Serve with a green salad and a lovely wine of your choice and you will be eating with Royalty. Enjoy your crock pot chicken recipe and come back to let me know how you liked it.

Ingredients

4 T margarine or butter
1 T canola oil
1 lg. onion, chopped
3 lb chicken breasts, boneless and skinless
2 C chicken broth
2 stalks celery, chopped
2 lg. carrots, peeled and chopped
1 T parsley, minced
1 tsp. pepper
1 tsp. salt
1/2 tsp. allspice
1 C dry white wine
1 can of refrigerator biscuits
1/2 C heavy cream
2 T flour

Instructions

  1. Place the margarine in a large skillet over medium heat.
  2. Heat the margarine until it is completely melted.
  3. Then add the oil.
  4. Put the onion into the skillet and cook about 2 minutes or until just tender.
  5. Add the chicken and cook 2 minutes per side or until lightly browned.
  6. Place the chicken and onions into the crock pot.
  7. Add the chicken broth.
  8. Add the celery, carrots, parsley, pepper, salt, allspice and wine.
  9. Cover and cook 2 1/2 hours on high.
  10. Remove the chicken from the crock pot and set aside.
  11. Place the heavy cream and flour in a mixing bowl.
  12. Mix together until the flour has completely dissolved.
  13. Add the mixture to the crock pot.
  14. Cut each biscuit into quarters.
  15. Drop the biscuit quarters into the crock pot and be sure it is still on the high temperature.
  16. Cover and cook 30 minutes or until firm.
  17. Return the chicken to the crock pot and allow to cook on high 10 minutes.

My dear friend and Foodie extraordinaire, Correen, has very generously offered to share her delicious Chicken Chili Recipe with us. Thank you Correen, as usual it is a pleasure to work with you.

I had chicken chili on the brain the other day – the ingredients were in my fridge and pantry, it was perfect chilly weather here in Washington, and my hubby needed something warm and hearty in his thermos for work. Plus I thought it would be a down-home tasty and different filling for my recent tamale making craze!

Once you have cooked my chicken chili recipe let it simmer low and slow, stirring occasionally, so all the flavors meld and the chicken and beans grab onto the savory mix of spices and seasonings.

Correen’s Chicken Chili (Chili Con Pollo)

Correen’s Chicken Chili (Chili Con Pollo)

Ingredients

¼ cup olive oil
2 cups onions; coarsely chopped
2 cups green peppers; cut into ½ inch strips
3 cups of chicken breasts or tenders; cut into chunks

In a large stockpot heat olive oil to sizzling (med-high heat). Toss in the veggies and chicken, stir the mixture until chicken is golden brown and the veggies are tender; about 5 to 8 minutes.

1 tablespoon mesquite seasoning
1 ½ tablespoons garlic powder
2 teaspoons dried oregano
2 teaspoons ground cumin
½ teaspoon ground cinnamon
1 tablespoon unsweetened cocoa powder

Remove stockpot from heat and stir in all the seasonings and spices. Return to med-high heat and continue stirring for a minute or so.

6 cups cooked beans*
2 15 ounce cans of tomato sauce
1 10 ounce can of Original Rotel
2 ½ cups hot water

Instructions

  1. Add in remaining ingredients, gently stirring to incorporate all the ingredients. Bring to a boil, turn heat down to medium and slow simmer uncovered for 1 ½ hours. Occasionally stir, making sure nothing is sticking to the bottom of the pot.
  2. Note: To thicken this chicken chili recipe, this step might not be necessary after slow simmering, mix two tablespoons of masa harina (corn masa flour) with four tablespoons of water to make a thick paste. Stir in ½ the mixture and continue simmering, if chili still is not as thick as you like it add the remaining corn flour paste.
  3. *About the cooked beans - I used an eight bean blend, cooked to al dente. Feel free to use any mix of beans that you and your family prefer. Canned beans can also be used, just make sure to drain and rinse the beans in a colander.

I love to cook chicken. And a chicken fillet recipe is only the tip of the iceberg. I am very fussy about my chicken recipes.   I know how to cook chicken, I really do. I can cook it dozens of ways, baked, fried, stewed, crock pot, roasted even boiled. Chicken is one of the most versatile ingredients on the planet. But like I said, I am really fussy about it. I don’t want it even a tiny bit under done. And I like flavor, not just cooked so it’s not raw. I want it to be sensational.

I thought since I love cooking and cooking with chicken is a favorite, then maybe I could share my recipes or recipes I find from others and create an atmosphere of great cooks sharing

I don’t consider myself a chef by any stretch of the imagination. I grew up in the south (Missouri) and my mom was a great cook. Talk about flavor… she had it all. I learned a lot of my cooking from her.  And I don’t want you to think this is only going to be a blog about chicken recipes.  No I sure know how to cook a lot more than that. I just had to get started somewhere, and the most versatile ingredient on the planet seemed just right.

So that is what I am doing with this blog. I am going to share my chicken fillet recipes and all my other chicken recipes, and even my other dinner recipes with you. I can show you how to cook chicken and make it taste great. And you’ll have fun doing it. And while we are at it, we can even fry up a burger. So let’s get started.

A Delicious quick and easy Chicken Fillet Recipe. But don’t be deceived, a wonderful depth of flavor your entire family will enjoy.

Grilled Chicken Fillets with Lemon Rosemary Sauce
Grilled Chicken Fillets with Lemon Rosemary Sauce

INGREDIENTS:

2/3 cup mayonnaise

zest of 1/2 lemon

1/4 cup fresh lemon juice

2 teaspoons chopped fresh rosemary

1 large garlic clove, crushed or grated

One package of chicken fillets, pounded thin (or as many as you need)

1 teaspoon salt

1/4 teaspoon freshly ground black pepper

 

Prepare sauce:  Whisk together the first 5 ingredients and set aside.

Prepare chicken:  Place chicken fillets between heavy plastic wrap or inside a plastic food bag.  Lightly pound with the flat side of a meat mallet or the bottom of a small cast iron pan, pounding lightly and working your way from the center to the edge until chicken fillet is even thickness.  Salt and pepper each fillet, both sides.

Lightly oil grill grate or rack and set grill temperature to medium. These chicken fillets will cook very quickly, be sure to plan to stay with them while cooking.

When grill is up to temperature, arrange the chicken on the grill and bring the sauce out.

Cook for about 3 to 4 minutes or until you have nice grill marks on the chicken.

Flip and brush the cooked side with sauce, leaving the chicken on the grill for about 3 or 4 minutes more.

Flip and again brush the top with sauce and leave the chicken on the grill this time for about 1 or 2 minutes more. Chicken should feel firm when squeezed with tongs. It is actually better and I recommend that you use a meat thermometer, and cook to an internal temperature for chicken of 165 degrees.

Remove from grill and let sit for 3 or 4 minutes before serving.

This chicken fillet recipe is delicious, simple and quick to prepare. Serve with your favorite sides and Enjoy!
