<p>Based on the scrumptious best-seller of the same name by <a href="http://ruhlman.com/">Michael Ruhlman</a>, Ratio is an app that teaches the relationships of cooking.  For example, what ingredients make up the foundation for common recipes—such as meat preparation, batter, dough for breads, sauces, casseroles, and desserts.  So if you’re an aspiring chef, Ratio is your kitchen 101, an invaluable tool for cooking food and a long-term reference on your road to becoming a culinary expert.</p>
<p>2.  <a href="http://itunes.apple.com/ca/app/how-to-cook-everything-for/id367690249?mt=8">How to Cook Everything</a> ($4.99 – for iPhone)</p>
<p>Another app based on a best-selling cooking book, How to Cook Everything, was created by culinary genius <a href="http://markbittman.com/">Mark Bittman</a>, and provides cooking techniques, kitchen tips, meal planning, and over 2,000 recipes accompanied by 400 illustrations. This app organizes its database of recipes into intuitive categories for browsing or searching. It also provides users with grocery lists to help you be prepared before you even put your chef’s hat on.</p>

<p>Chef is much more than your standard recipe app. This app lets aspiring chefs create their own mobile cookbook. <div>I had chicken chili on the brain the other day &#8211; the ingredients were in my fridge and pantry, it was perfect chilly weather here in Washington, and my hubby needed something warm and hearty in his thermos for work. Plus I thought it would be a down-home tasty and different filling for my recent <a title="Use this Chicken chili in this great chicken tamale recipe" href="http://wizzley.com/chicken-tamale-recipe/" target="_blank">tamale making craze</a>!</div>

<p>Once you have cooked my chicken chili recipe let it simmer low and slow, stirring occasionally, so all the flavors meld and the chicken and beans grab onto the savory mix of spices and seasonings.</p>

Occasionally stir, making sure nothing is sticking to the bottom of the pot.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Note: To thicken this chicken chili recipe, this step might not be necessary after slow simmering, mix two tablespoons of masa harina (corn masa flour) with four tablespoons of water to make a thick paste. Stir in ½ the mixture and continue simmering, if chili still is not as thick as you like it add the remaining corn flour paste. </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">*About the cooked beans - I used an eight bean blend, cooked to al dente. Feel free to use any mix of beans that you and your family prefer. How about you?I really like Crock pots and I think they are underutilized.So let&#8217;s change that, shall we?</p>
<p>I&#8217;ve had this wonderful chicken recipe dozens of different ways. Sometimes I make my own dumplings from scratch. Of course, I am usually trying to impress someone when I go to that extra effort.  But no matter it is delicious. And unnecessary. There are so many delightful ways to make dumplings, you should experiment with different techniques, One of the nicest and easiest ways is to make biscuits and drop it into the boiling chicken liquid.</p>
<p>Here is a variation on a great <strong>crock pot recipe. </strong>This is the quick , down and dirty method where you don&#8217;t even have to make the dumplings from scratch and you&#8217;ll never know the difference. Just don&#8217;t tell them.  Chicken and Dumplings can be on your dinner table tonight. Bon Appetit!</p>

<p>INGREDIENTS:</p>
<p>2/3 cup mayonnaise</p>
<p>zest of 1/2 lemon</p>
<p>1/4 cup fresh lemon juice</p>
<p>2 teaspoons chopped fresh rosemary</p>
<p>1 large garlic clove, crushed or grated</p>
<p>One package of <strong>chicken fillets</strong>, pounded thin (or as many as you need)</p>
<p>1 teaspoon salt</p>
<p>1/4 teaspoon freshly ground black pepper</p>
<p>&nbsp;</p>
<p>Prepare sauce:  Whisk together the first 5 ingredients and set aside.</p>
<p>Prepare chicken:  Place <strong>chicken fillets</strong> between heavy plastic wrap or inside a plastic food bag.  Lightly pound with the flat side of a meat mallet or the bottom of a small cast iron pan, pounding lightly and working your way from the center to the edge until chicken fillet is even thickness.  Salt and pepper each fillet, both sides.</p>
<p>Lightly oil grill grate or rack and set grill temperature to medium. These chicken fillets will cook very quickly, be sure to plan to stay with them while cooking.</p>
<p>When grill is up to temperature, arrange the chicken on the grill and bring the sauce out.</p>
<p>Cook for about 3 to 4 minutes or until you have nice grill marks on the chicken.</p>
<p>Flip and brush the cooked side with sauce, leaving the chicken on the grill for about 3 or 4 minutes more.</p>
<p>Flip and again brush the top with sauce and leave the chicken on the grill this time for about 1 or 2 minutes more. Chicken should feel firm when squeezed with tongs. It is actually better and I recommend that you use a meat thermometer, and cook to an internal temperature for chicken of 165 degrees.</p>
<p>Remove from grill and let sit for 3 or 4 minutes before serving.</p>
<p>This <strong>chicken fillet</strong> recipe is delicious, simple and quick to prepare. Serve with your favorite sides and Enjoy!</p>

<p>I love to <strong>cook chicken</strong>. And a <strong>chicken fillet recipe</strong> is only the tip of the iceberg. I am very fussy about my <strong>chicken recipes</strong>.   I know how to <strong>cook chicken</strong>, I really do. I can cook it dozens of ways, baked, fried, stewed, crock pot, roasted even boiled. Chicken is one of the most versatile ingredients on the planet. But like I said, I am really fussy about it. I don’t want it even a tiny bit under done. And I like flavor, not just cooked so it’s not raw. I want it to be sensational.</p>
<p>I thought since I love cooking and <strong>cooking with chicken</strong> is a favorite, then maybe I could share my <strong>recipes</strong>or recipes I find from others and create an atmosphere of great cooks sharing</p>

<p>I don’t consider myself a chef by any stretch of the imagination. I grew up in the south (Missouri) and my mom was a great cook. Talk about flavor… she had it all. I learned a lot of my cooking from her.  And I don’t want you to think this is only going to be a blog about <strong>chicken recipes. </strong> No I sure know how to cook a lot more than that. I just had to get started somewhere, and the most versatile ingredient on the planet seemed just right.</p>
<p>So that is what I am doing with this blog. I am going to share my <strong>chicken fillet recipes</strong> and all my other <strong>chicken recipes</strong>, and even my other dinner recipes with you. I can show you how to <strong>cook chicken</strong> and make it taste great. And you&#8217;ll have fun doing it. And while we are at it, we can even fry up a burger. So let’s get started.</p>
